For the Rice:
- 2 cups cooked short-grain rice
- 1 tablespoon sesame oil
- 1 tablespoon salt
For the Fillings:
- 4 sheets of roasted seaweed (gim)
- 1 large carrot, julienned
- 1 cucumber, julienned
- 3 eggs, beaten and cooked into a thin omelet, sliced
- 1 cup halal beef or chicken, cooked and shredded
- 1 cup pickled radish (halal-certified)
Prepare the Fillings
Sauté the carrots and cucumber until slightly softened. Set aside.
Cook the halal beef or chicken with soy sauce, garlic, and a touch of sugar.
Assemble the Kimbap
Place a sheet of seaweed on a bamboo sushi mat. Spread an even layer of rice, leaving a 1-inch border at the top.
Lay the fillings horizontally across the rice.
Roll the seaweed tightly, using the bamboo mat to secure the shape. Seal the edge with a bit of water.
