Ingredients

Vegetables:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 medium zucchini, diced
  • 1 cup green beans, trimmed and halved

Base:

  • 4 cups halal vegetable or chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Beans and Pasta:

  • 1 can (14 oz) cannellini beans, drained and rinsed
  • 1 can (14 oz) red kidney beans, drained and rinsed
  • 1 cup small pasta (e.g., ditalini, macaroni, or orzo)

Garnish:

  • Fresh basil leaves
  • Grated halal Parmesan cheese (optional)

Instructions

Prepare the Base

  • Heat olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery, sautéing until softened, about 5 minutes.

Build the Flavor

  • Stir in zucchini, green beans, diced tomatoes, and tomato paste. Add basil, oregano, salt, and pepper. Cook for 2 minutes to release the flavors.

Simmer the Soup

  • Pour in the halal broth and bring to a boil. Reduce the heat to low and let the soup simmer for 20 minutes.

Add Beans and Pasta

  • Stir in the beans and pasta. Continue cooking until the pasta is tender, about 10 minutes.

Serve and Enjoy

  • Ladle the soup into bowls and garnish with fresh basil and grated halal Parmesan. Serve with crusty bread or crackers for a complete meal.
