Ingredients

  • 1 lb (500g) halal-certified prawns, cleaned and deveined
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 2 tomatoes, pureed
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 cup coconut milk
  • 1 tablespoon turmeric powder
  • 1 tablespoon cumin powder
  • 1 tablespoon coriander powder
  • 1/2 tablespoon chili powder (adjust to taste)
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

Marinate the Prawns

  • Toss prawns with turmeric, salt, and a pinch of chili powder. Let sit for 10 minutes.

Make the Curry Base

  • Heat oil in a pan. Sauté onions until golden brown.
  • Add ginger and garlic, cooking until fragrant.
  • Stir in pureed tomatoes and cook until the oil separates.

Add Spices and Coconut Milk

  • Mix in cumin, coriander, chili powder, and salt. Cook for 2 minutes.
  • Pour in coconut milk, stirring to combine. Simmer for 5 minutes.

Cook the Prawns

  • Add the prawns to the curry, cooking for 5-7 minutes until fully cooked.
  • Garnish with fresh cilantro.
