- 1 lb (500g) halal-certified prawns, cleaned and deveined
- 2 tablespoons vegetable oil
- 1 medium onion, finely chopped
- 2 tomatoes, pureed
- 2 cloves garlic, minced
- 1-inch piece of ginger, minced
- 1 cup coconut milk
- 1 tablespoon turmeric powder
- 1 tablespoon cumin powder
- 1 tablespoon coriander powder
- 1/2 tablespoon chili powder (adjust to taste)
- Salt to taste
- Fresh cilantro for garnish
Make the Curry Base
Heat oil in a pan. Sauté onions until golden brown.
Add ginger and garlic, cooking until fragrant.
Stir in pureed tomatoes and cook until the oil separates.
Add Spices and Coconut Milk
Mix in cumin, coriander, chili powder, and salt. Cook for 2 minutes.
Pour in coconut milk, stirring to combine. Simmer for 5 minutes.
Cook the Prawns
Add the prawns to the curry, cooking for 5-7 minutes until fully cooked.
Garnish with fresh cilantro.
