Ingredients

Vegetables:

  • 2 zucchinis, sliced
  • 2 eggplants, diced
  • 2 bell peppers (red and yellow), chopped
  • 3 ripe tomatoes, diced
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced

Seasonings:

  • 3 teaspoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste

Optional Garnish:

  • Fresh basil leaves
  • Drizzle of extra virgin olive oil

Instructions

Prep the Vegetables

  • Wash and chop all vegetables into bite-sized pieces.
  • If time permits, sprinkle diced eggplant with salt and let sit for 15 minutes to draw out bitterness. Rinse and pat dry.

Sauté the Vegetables

  • Heat 2 teaspoons olive oil in a large skillet or pot over medium heat.
  • Add the onion and garlic, sautéing until fragrant and translucent.
  • Add the bell peppers, zucchini, and eggplant, cooking for 8-10 minutes until slightly softened.

Add Tomatoes and Seasonings

  • Stir in the diced tomatoes, thyme, oregano, paprika, salt, and pepper.
  • Reduce the heat to low, cover, and simmer for 20-25 minutes, stirring occasionally.

Final Touches

  • Taste and adjust seasonings as needed.
  • Garnish with fresh basil leaves and a drizzle of olive oil before serving.
