Vegetables:
- 2 zucchinis, sliced
- 2 eggplants, diced
- 2 bell peppers (red and yellow), chopped
- 3 ripe tomatoes, diced
- 1 large onion, finely chopped
- 3 cloves garlic, minced
Seasonings:
- 3 teaspoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper to taste
Optional Garnish:
- Fresh basil leaves
- Drizzle of extra virgin olive oil
Prep the Vegetables
Wash and chop all vegetables into bite-sized pieces.
If time permits, sprinkle diced eggplant with salt and let sit for 15 minutes to draw out bitterness. Rinse and pat dry.
Sauté the Vegetables
Heat 2 teaspoons olive oil in a large skillet or pot over medium heat.
Add the onion and garlic, sautéing until fragrant and translucent.
Add the bell peppers, zucchini, and eggplant, cooking for 8-10 minutes until slightly softened.
Add Tomatoes and Seasonings
Stir in the diced tomatoes, thyme, oregano, paprika, salt, and pepper.
Reduce the heat to low, cover, and simmer for 20-25 minutes, stirring occasionally.
