Halal Samosas

For the Dough:
- 2 cups all-purpose flour
- 1/4 cup vegetable oil or ghee
- 1/2 tablespoon salt
- 1/3 cup water (adjust as needed)
For the Filling (Spiced Potatoes):
- 3 medium potatoes, boiled and mashed
- 1/2 cup green peas (optional)
- 1 small onion, finely chopped
- 2 tablespoons vegetable oil
- 1 tablespoon cumin seeds
- 1 tablespoon garam masala
- 1 tablespoon coriander powder
- 1/2 tablespoon turmeric powder
- 1/2 tablespoon chili powder (adjust to taste)
- Salt to taste
- A handful of fresh cilantro, chopped
For Frying:
- Vegetable oil for deep frying
Prepare the Dough
In a bowl, mix flour, salt, and oil until the mixture resembles breadcrumbs.
Gradually add water and knead into a firm, smooth dough. Cover with a damp cloth and let it rest for 30 minutes.
Make the Filling
Heat oil in a pan over medium heat. Add cumin seeds and sauté until aromatic.
Add onions and cook until golden brown.
Stir in spices (garam masala, coriander, turmeric, chili powder) and salt.
Add mashed potatoes and green peas. Mix well and cook for 2-3 minutes.
Remove from heat and mix in fresh cilantro. Let the filling cool completely.
Assemble the Samosas
Divide the dough into small balls and roll each into a thin circle.
Cut each circle in half to form two semi-circles.
Shape each semi-circle into a cone, sealing the edges with a bit of water.
Fill the cone with 1-2 tablespoon of the potato mixture, then seal the open edge to form a triangular samosa.
