Halal Seafood Paella Recipe

For the Paella Base:
- 2 cups Bomba rice (or Arborio rice)
- 4 cups halal seafood or vegetable broth
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 medium tomato, grated
- 1 tsp smoked paprika
- ½ tsp saffron threads, soaked in 2 tbsp warm water
- Salt and black pepper to taste
For the Seafood:
- ½ lb (225g) halal shrimp (peeled and deveined)
- ½ lb (225g) halal mussels or clams (cleaned)
- ½ lb (225g) halal squid (sliced into rings)
For Garnish:
- 1 lemon, cut into wedges
- ¼ cup fresh parsley, chopped
Prepare the Base
Heat olive oil in a large paella pan or wide skillet over medium heat.
Add chopped onion and sauté until soft and translucent.
Stir in the minced garlic and grated tomato. Cook for 3-4 minutes until the tomato breaks down.
Add smoked paprika, saffron-infused water, salt, and pepper. Mix well.
Cook the Rice
Pour in the rice and stir to coat it with the seasonings.
Add the hot seafood or vegetable broth. Do not stir after this point to allow the rice to form a crispy bottom (known as u0022socarratu0022).
Reduce heat to medium-low and let the rice cook undisturbed for about 15-18 minutes, or until most of the liquid is absorbed.
Add the Seafood
Arrange shrimp, mussels, and squid on top of the rice. Gently press them into the mixture.
Cover with foil or a lid and let the seafood cook for another 5-7 minutes, until the mussels open and the shrimp turn pink.
Turn off the heat and let the paella rest for 5 minutes.
