Ingredients

For the Marinade:

  • Two cups of plain yogurt (preferably full-fat for creaminess)
  • Three tablespoons of freshly squeezed lemon juice
  • Four cloves of garlic, finely minced
  • Two tablespoons of olive oil
  • One tablespoon of white vinegar
  • Two teaspoons of paprika
  • One teaspoon of ground cumin
  • One teaspoon of ground coriander
  • One teaspoon of salt
  • One-half teaspoon of black pepper

For the Skewers:

  • One kilogram of boneless chicken breast or thighs, cut into bite-sized pieces
  • Wooden skewers (soaked in water for 30 minutes to prevent burning)

Instructions

  • Prepare the Marinade: In a large bowl, combine yogurt, lemon juice, garlic, olive oil, white vinegar, and all the spices. Mix well until smooth and creamy.
  • Marinate the Chicken: Add the chicken pieces to the marinade, ensuring each piece is thoroughly coated. Cover the bowl and refrigerate for at least four hours or overnight for the best flavor.
  • Preheat the Grill: Heat your grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.
  • Assemble the Skewers: Thread the marinated chicken onto the wooden skewers, leaving small gaps between the pieces for even cooking.
  • Grill the Chicken: Place the skewers on the grill, turning every 3 to 4 minutes until the chicken is cooked through and lightly charred. This should take about 12 to 15 minutes.
  • Serve and Enjoy: Transfer the skewers to a serving platter and garnish with fresh parsley or lemon wedges.
