Halal Sticky Date Pudding

Ingredients

For the Pudding:

  • 1 ½ cups of pitted dates, chopped
  • 1 ½ cups of boiling water
  • 1 teaspoon of baking soda
  • ½ cup of halal-certified unsalted butter, softened
  • 1 cup of brown sugar
  • 2 large eggs
  • 1 ¾ cups of self-rising flour
  • 1 teaspoon of alcohol-free vanilla extract

For the Caramel Sauce:

  • 1 cup of halal-certified heavy cream
  • ½ cup of brown sugar
  • ½ cup of halal-certified unsalted butter
  • 1 tablespoon of date syrup or alcohol-free vanilla extract

Instructions

Prepare the Dates:

  • Place chopped dates in a bowl and pour boiling water over them. Add baking soda, stir, and let sit for 10 minutes to soften.

Make the Batter:

  • In a mixing bowl, cream butter and brown sugar until fluffy. Beat in eggs one at a time, then add vanilla extract. Fold in the softened dates (with liquid) and self-rising flour until just combined.

Bake the Pudding:

  • Preheat the oven to 180°C (350°F). Grease a baking dish or ramekins. Pour the batter into the prepared dish and bake for 30–35 minutes, or until a skewer inserted into the center comes out clean.

Prepare the Caramel Sauce:

  • In a saucepan, combine cream, brown sugar, butter, and date syrup. Heat over medium heat, stirring constantly, until the sugar dissolves and the sauce thickens (about 5–7 minutes).

Assemble and Serve:

  • Once baked, poke holes in the pudding with a skewer and pour some caramel sauce over the top to soak. Serve warm with additional caramel sauce on the side.
